Jakartanese Mixed Rice (Nasi Uduk)

Ingredients :


  • 250 gr rice, washed and strained
  • 1/2 teaspoon salt (depend of you favour)
  • 300 ml coconut milk
  • 2 salam leaf
  • 1 pandan leaf
  • 1/2 teaspoon coriander powder

Peanut Sauce :
  • 50 gr fried peanut
  • 1 red chili
  • 3 bird's eyes chili
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon vinegar
  • 75 ml water

Additional Ingredients :
  • Fried peanut
  • Fried Teri Medan
  • Fried shallot
  • Fried emping belinjo, cracker
  • Omelet
  • Kering tempe

Directions :
Wash and drain the rice in a sieve or colander.
Steam the rice until half cooked (about 20 minutes), then move it to the deep pot.
Boil the coconut milk together with salam leaf, pandan leaf, coriander powder and salt. Then pour into the rice until 1 finger joint above the rice.
Cook and stir, with low heat until all the coconut milk absorbed.
Then steam the rice until cook.
Make the peanut sauce by grinding all the ingredients to make a paste, then add water and cook it for sometime until the sauce is thicken.
Remove the leaf before serving. Serve with fried chicken, omelet, fried peanut, kering tempe, give fried another and fried shallot on the top of the rice. Garnish with raw cucumber and emping belinjo cracker. Serve with Sambal Terasi.
