Balinese Chicken Grill



Ingredients :

  • 1 whole chicken
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 5 tablespoons oil for frying
  • 6 lime leaves
  • 4 stalk lemon grass, crushed
  • 1 tablespoon tamarind water
  • 200 ml of water

Spices :
  • 5 pieces red chili
  • 3 pieces red chili sauce
  • 8 pieces onion
  • 6 cloves garlic
  • 1 teaspoon shrimp paste cooked
  • 3 cm turmeric
  • 1 cm kencur
  • 6 items pecans, toasted
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon sugar

How to make :

Marinate chicken pieces with lemon juice and salt. Take a few moments.
Stir fry ground spices until fragrant. Add the lemon grass and lime leaves, stir until wilted.
Enter the chicken pieces, stirring until the chicken changes color and smeared with condiments.
Add water, acidic water, cover pan and reduce heat. Cook until chicken 3/4 cooked. Remove the chicken.
Roast the chicken while turning occasionally until chicken is cooked. Brush with marinade occasionally.
Remove the chicken and serve.
