Lotek Jogja

Recepis Lotek Jogya 


Ingredients:

  • spinach
  • bean sprouts
  • cabbage, sliced
  • cucumber, sliced
  • 2 pieces fried tofu and tempeh
  • rice cake
  • crackers


Sauce :

  • 150 grams roasted peanuts
  • 2 cloves garlic
  • 2 pieces red pepper
  • 2 lime leaves
  • 1 cm kencur
  • 1/2 teaspoon shrimp paste
  • salt, optional
  • 2 tablespoons brown sugar
  • 1 seed tamarind

How to make lotek :

Spinach, bean sprouts and long bean boiled. Drain.

Added tamarind water and then kneaded. For the amount of water, only guesses at.
Puree until smooth the Chili, shrimp paste, kencur, salt and lime leaves.

Enter peanuts. Puree again until smooth peanut.
Add the brown sugar and tamarind water, while the puree to mix.

Put the vegetables that have been boiled and cucumber slices, into a pestle and mortar and mix/stir.
If using cake rice, cut into small pieces and mixing inputs together with vegetables.
serve. Can added crackers to add to paste.


Note : When entering the tamarind  water, should little by little just enough so that foods does not becomes too muddy.
