Cumi Saus Padang (Stir Fried Squid in Padang Sauce)

Ingredients :

  • 500 gr medium size squid
  • 3 tablespoons oil for frying
  • 1 teaspoons lime juice
  • 1 turmenic leaf
  • 2 stalks lemonggrass
  • 1 false mangosteen

Blended Spices :
  • 4 cloves garlic
  • 1 tablespoon minced red chilli
  • 10 shallots
  • 2 cm ginger

How to :

Pell the skin of squid, removed the ink sac, clean, then slice crosswise 2 cm.
Marinate the squid with lime juice, leave for 20 minutes. Rinse with clean water, then drain.
Heat oil and stir fry the blended spices, add turmeric leaf and lemongrass until fragrant.
Add false mangosteen and squid. Stir until the squid stiffens.
Cook all ingredients until fully cooked and the sauce thickens.
Lift and serve immediately.
